Tofu and Veggies in Tomato Sauce Pasta

So this is a weekend recipe for festive touch and at the same time healthy. It’s easy, quick and delish dish for the family.


  • Tofu cubes
  • Eggplant
  • Squash
  • Basil
  • Fresh Tomatoes
  • Tomato Sauce
  • Olives
  • Onion
  • Garlic
  • Chinese Oregano
  • Salt
  • Pepper
  • Vegan Cashew Cheese


  1. Fry tofu and set aside. Then fry squash and egpplant and set aside.
  2. Saute onion, garlic, then add tomatoes. Add the tofu, eggplant and squash.
  3. Add tomato sauce, oregano, basil, and olives.
  4. Dash of Salt and Pepper to taste.
  5. Sprinkle cashew vegan cheese.
